Tasting note
Trust Your Gut is a blend from Stellenbosch and Swartland. It is not surprising that it has characteristics from both regions: the shiny yellow fruit and saltiness of the decomposed granite soils of Polkadraai and the basil stalks and floury intensity from Swartland. Wonderfully balanced and expressive.
Culinary recommendation
Try this wine with a cerviche of white fish with cherries and lemon balm.
Vinification
While Kamraderie is a single vineyard, Trust Your Gut is a blend of two different plots of land. One is a 40-year-old block in Joubertskloof on the west side of the Paardeberg in Swartland, which grows on soft, sandy granite soils. The other 27% of the wine comes from the Polkadraai Hills in Stellenbosch, which are farmed by Jozua Joubert, the famous Karibib. What the two vineyards have in common is the granite-based soil. The grapes are pressed as a whole and left to rest overnight. The next morning, the wine is poured into 500-liter old French oak barrels to begin natural fermentation without any additives. The wine remains on its primary yeast until it is bottled in November. Stellenbosch has strong fruit aromas such as pineapple, dried mango and apricots. It tends to have slightly more fruit weight than the grapes from Paardeberg. Swartland, on the other hand, brings excitement and focus to the palate.
