About the wine
The Ripasso is the wine of the Verona farming tradition and is obtained using an old oenological process, the winemaking process known as “Ripasso”. This technique includes Around the young Valpolicella on the skins at the end of the fermentation of Recioto. The wine becomes warm and ripe. Ripasso restores the characteristics of Valpolicella freshness and drinkability, but also the richer, more concentrated feelings of chocolate and black chocolate and black cherry, which are due to the dried grapes.
Tasting note
Intense purple color with purple reflections. The nose has an intense and clean scent of ripe red fruits and notes of dark fruits such as blackberries, blackcurrants and ripe cherries. Velvety red and harmonious, full and round, yet lively and intense, with a spicy aftertaste.
Culinary recommendation
Goes well with a variety of Italian dishes: savory first courses such as risotto with porcini mushrooms, pasta all'amatriciana and alla carbonara; grilled meats and roasts. It also goes well with middle-aged cheeses.
