Tasting note
Straw yellow with golden reflections Bouquet: Very fine, intense and complex with notes of vanilla cream and thyme. Recognizable nuances of tree strawberry and passion fruit. Taste: Full-bodied wine, elegant and refined with a soft, mineral note. In the end, white flowers and acacia to honey.
Culinary recommendation
Goes well with aperitifs, vegetable casseroles, sushi & sashimi, salty pancakes, soft cheese made from cow's milk, asparagus, chicken and freshwater fish.
Vinification
Taste the terroir in the wine — the Höfflin winery is all about this guiding principle. And where could that be better than in the Kaiserstuhl? This low mountain range rises between Alsace and the Black Forest, the climate and nature are unique in Germany's sunniest area. Vital, robust vines thrive on the volcanic soils, perfectly grown in airy mineral loess/loam. The vines are planted in its highest layers in eastern Kaiserstuhl. Souvignier gris is a mushroom-resistant white wine variety newly bred in 1983. The variety has good peronospora resistance and a very good resistance to oidium and botrytis. These properties make it possible to reduce the number of plant protection measures even in wine-growing regions with higher rainfall. Crossroads of Cabernet Sauvignon x Bronner. Spontaneous fermentation, no addition of selected yeasts, bottled unfiltered. Acid 5.1 g/l; sulphites: only 9 mg/l.
