A wine grown high up on the foothills of the Greenland Mountains in the cool climate of Elgin, which results in slow aging that develops beautiful, savory tropical fruits. Since the cool climate in Elgin results in a delayed maturing period, our Sauvignon Blanc is allowed to mature in the vineyard where other warmer regions do not have this luxury. Reductive winemaking with cool fermentation temperatures results in a wine that is bursting with beautiful depth of fruit.
