About the wine
With experience and intuition, the winemaker from the Italian winery Azienda Agricola Stefano Berti in the blooming and fertile Emilia-Romagnaa countryside masters this red wine. If we can offer something special for Christmas 2021, it's this snappy Sangiovese 2019 — Rossetto Vino Frizzante Rosato. Flaschenpöstler culinary tip: This Sangiovese is very good to serve with pizza or pasta.
Tasting note
The bouquet not only shows yeast notes, but a fresh fruit basket is also available. Direct and straight on the palate, the pleasant perlage also allows a big sip. Thanks to the clear and clean aroma, this can be followed immediately by the second.

Flaschenpöstler-Tipp: Rossetto Vino Frizzante Rosato passt perfekt zu Pasta, Rindfleisch und Lamm.
Vinification
The Rossetto is pressed according to the “ancestral method”. With this technique, the wine is bottled before fermentation is completely complete. With a residual sugar content of 10 g per liter, fermentation is interrupted by cooling. The young wine is stored in temperature-controlled steel tanks for about 6 months, during which the yeast is stirred regularly and thus kept moving. The bottling, without additives, takes place in March. As the temperature rises, fermentation resumes. The remaining sugar is converted into alcohol, and the resulting carbonic acid remains in the wine as a sparkling perlage.
