About the wine
The dominant Corvina 2008 — Valpolicella Classico Superiore DOC is the missing piece of the puzzle in your wine rack. Enchanting and fertile landscapes in Veneto give us these grapes, from which the winemaker from the Italian winery Rubinelli Vajol conjures up this red wine with refinement and experience. Tasting note
The result is a strong ruby-red ripasso with intense fruit aromas of dried fruits, dark berries and sweet spicy notes. The wine is well-structured, full of character and with an impressive body. A slightly peppery note on the palate, velvety tannins, some fruit sweetness and an almost endless aftertaste make this wine a top example of its kind.
Culinary recommendation
Goes well with Italian cuisine, hearty meat dishes, game dishes, pot roast, chocolate, medium-ripe semi-hard and hard cheeses.
Vinification
Ripasso means “new passage” when translated. This is also how a ripasso is made. After the Valpolicella has been fermented, the young wine is fermented again on unpressed grape skins from Amarone production. This process gives Valpolicella more body, more character and more richness of flavor. At Rubinelli Vajol, the Ripasso is then aged in large wood for approx. 18 months.
