About the wine
A viticulture and absolute passion project from our private client manager and sommelier of the year 2006 at Gault Millau, Stefan Weise. Stefan has been cultivating one of the best plots of land in Neumagen Rosengärtchen on the Moselle since 2008. He has been following his very own winemaking approach since 2014. Nature determines the taste of the wine every year. Fermentation is not intervened; once it is complete, the wine is ready. This is not pressed into a predefined profile or a fixed idea. The wines are usually stored for a few more years until Stefan finds them ready for customers. Today, his wine can be enjoyed in many excellent restaurants and at La Pegola in Rome.
Tasting note
Trick and Treat! A perfect interplay of sweetness and acidity, on the one hand seductive, ripe stone fruit aromas, white peach, apricot and exotic fruit of passion fruit, on the other hand a crisp, salty freshness, both combined by the subtle, elegant and tart Botrytis tones, which provide versatility and excitement. Here you have nothing to worry about, just relax and enjoy.
Vinification
Selective reading by hand. The grapes infested with Botrytis are vinified separately from the ones that are still intact, both are spontaneously fermented with the vineyard's own yeasts in a 100-year-old large wooden barrel, the fermentation is not intervened, when the fermentation is finished, it is also the wine, after which the two wines are reunited, the cuvée then rests on the yeasts in steel tanks for about 3 months.
