Tasting note
This lively Sauvignon Blanc shows notes of lime and elderflower on the nose with hints of blackcurrants and fennel. On the palate, it shows a nice brightness and pronounced notes of lemon and lime.
Culinary recommendation
Goes very well with seafood and crustaceans or with goat cheese and feta cheese.
Vinification
After the late harvest, the grapes are pressed before the must settles cold overnight in stainless steel tanks without the addition of pectolytic enzymes. The juice is transferred to French barriques, in which spontaneous fermentation takes place. The wine matures for 8 months on the fine yeast in barrels without any sulphur additives before being bottled, sulphurized and prepared for bottling.
