Der Wein wird trotzdem nicht schwer, sondern bleibt dank seinem hohen mineralischen Gehalt sehr elegant, langanhaltend und lebhaft-rassig. Um diesen Charakter zu unterstreichen, erfolgt die Gärung - lange Mazeration mit Kernen und Beerenhäuten - in Stahltanks, desgleichen der nachfolgende Ausbau.
