About the wine
On the nose, the wine develops a variety of aromas reminiscent of very ripe red fruits (plum, blueberry, black currant), surrounded by Mediterranean spices (cinnamon and clove) and a touch of tobacco, almond and vanilla, which come from aging in wood.

Goes well with rich noodles, game meat, red meat, mature cheese
Vinification
The grapes are harvested around the first week of October, when they have reached their perfect aromatic and polyphenolic maturity. After desiccation and crushing, the grapes are fermented at a controlled temperature of 27°C to 29ºC with repeated pumping and “délestage” for 15 to 18 days. After spontaneous malolactic fermentation, the wine is aged in French wooden barrels (barriques and tonneaux) for 12 to 14 months.
