Tasting note
On the nose, a floral scent of stone fruit, orange, spices and some wax, on the palate a good fruitiness, moderate acidity and a slightly spicy finish. A wine with a subtle oxidative quality, beautifully sparkling with a bit of phenolic touch.
Culinary recommendation
Goes well with vegetarian Mediterranean dishes, such as artichokes or fennel in combination with tomatoes. It also goes very well with a bourride with rouille sauce.
Vinification
52% Chenin Blanc - Swartland (40 years old) and Piekenierskloof (61 years old) 27% Verdelho - Stellenbosch and Voorpaardeberg 13% Colombard - Swartland 5% Grenache Blanc - Piekenierskloof (cold maceration on skin for 5 days) 3% Palomino - Piekenierskloof (47 years old) Gentle whole grape pressing. No addition of yeast, acid, or enzymes. The wine aged in old French barrels for 10 months. Unvarnished and easily filtered.
