About the wine
The special thing about this traditional kriek is that it is brewed with whole cherries. Since genuine Schaerbeek cherries are scarce, the Lindemans brewery has found its perfect alternative elsewhere in Europe. It has a deep red color and a slightly pink foam crown. This very refreshing drink is a perfect thirst quencher, which, thanks to its sparkling and sparkling taste, is also ideal as an aperitif.
Tasting note
Ruby red with pink foam. The beer has a pure cherry flavor that is fresh and pleasantly sour, with a masterful sweet-sour balance. The sweet and sour attack of stone tannins turns into a sweet and sour finish that lasts for some time. The perfect balance between its acidity and the sweetness of cherries makes this beer a refreshing aperitif.
Culinary recommendation
It goes wonderfully with rabbits, mild blue cheeses such as Stilton or Bleu des Causses and bread with cottage cheese and herbs.
Vinification
To produce Old Kriek Cuvée René, the cherries ferment in a lambic that is at least six months old in huge 10,000-liter oak barrels, the foudres. After six months, this traditional Kriek is filled into corked 75 cl bottles. The beer is then subjected to a spontaneous second fermentation, which, after a few months, produces carbon dioxide (CO2), to which this authentic beer owes its carbonic acid and characteristic foam crown.
