About the wine

The vineyards, which are located on various slopes and soils, are exposed to the fresh sea breeze from the coast just 15 kilometers away. This cool climate produces fine aromas and at the same time offers optimal growing and ripening conditions for our grapes. An old-world style MCC made from the finest selected plots of traditional Chardonnay and Pinot Noir grapes, which are fermented in the bottle and aged for three years before disgorgement. Chardonnay adds to elegance, while Pinot Noir provides intensity and richness. A subtle pale gold color that goes hand in hand with a very delicate and elegant nose. A full-bodied classic style Method Cap Classique.

Tasting note
An old-world style sparkling wine made from the best selected plots of traditional Chardonnay and Pinot Noir grapes, fermented in the bottle and aged for five years before disgorging. Chardonnay provides elegance, Pinot Noir provides intensity and richness. A subtle pale golden color in harmony with a very delicate nose. A full-bodied Méthode Cap Classique in classic style. Freshly baked brioche and biscotti flavors with a rich yeast creaminess and an elegant and crunchy perlage.
Culinary recommendation
Goes well with oysters, fresh pan-fried fish or a cheese platter.
Vinification
All grapes came from the False Bay region in Stellenbosch. The traditional varieties Chardonnay and Pinot Noir were used. The grapes were picked by hand early in the morning at 18-20° Oechsle to ensure a low alcohol and pH value. Only free-range juice was used in whole grape pressing and the individual plots of each grape variety were vinified in stainless steel tanks. The second fermentation in the bottle took place for 60 months, then the MCC was degoged at a dosage of 4 g/l.
