Tasting note
Light and lively in appearance. On the nose, aromas of black currant leaves, wet slate and lime develop. Rich complex aromas of kiwi fruit and lemon peel follow the palate. In the middle part of the palate, it is structured and has a rough saltiness. Youthful and elegant, the wine concludes with a long, spicy finish.
Culinary recommendation
Goes well with grilled crustaceans or oysters.
Vinification
The Metis Sauvignon Blanc was inspired by Pascal Jolivet and his holistic approach to winemaking in Sancerre. With a unique and minimalistic approach to winemaking, it was possible to produce a wine that shows the true expression of Constantia's terroir. The name Metis refers to the collaboration between the two countries to produce this great wine. This fusion of philosophies is reflected in the flower on the label, which is a hybrid of South African Protea and French Iris. A pure Sauvignon Blanc that reflects a sense of place rather than technology. The grapes were harvested by hand from 4:00 in the morning from high-lying blocks that can withstand the way the wine is made. No sulfur was added during pressing and fermentation was spontaneous. The wine aged on lees for 12 months in a combination of stainless steel tank and 20% neutral wooden barrels.
