About the wine

The cross on the label symbolizes the crossing of the two types of wine Cabernet Franc and Merlot, Caberlot. This unique crossing thrives magnificently on the hillside, the Il Carnasciale winery founded by Wolf Rogosky, and wine connoisseurs from all over the world are fighting for the few auspicious magnum bottles. In the southern Chianti region, about 30 km from Siena, the vineyard is located just over 400 meters above sea level in sunny Valdarno.

Tasting note
The extraordinarily rich and powerful Caberlot reveals elegance and depth, excitement and energy. Dense, impenetrable ruby purple. At the beginning, we find decidedly spicy notes, later some laurel and ivy entwined with a rich, dark-berry fruit. Spicy and complex on the palate, shows notes of mulberry, then cardamom and laurel, some white pepper, lots of juicy fruit, spreads out for a long time, hearty tannin. Great and extremely rare wine!
Culinary recommendation
Goes well with stews and roasts, but also with a really juicy 'bistecca fiorentina'! Caberlot goes just as well with ripe hard cheeses.
Vinification
Podere Il Carnasciale's vineyards cover an area of just 3.5 hectares. Manual harvesting starts late in September and yields do not exceed 25-30 hectoliters per hectare. Strict attention is paid to handwork and the use of natural products. The ripe grapes are fermented in small stainless steel containers at 28-29°C. The wines are then stored in French barriques for 22 months, 70% of which are new, and then mature in the bottle for a further 16 months. Depending on the vintage, around 3000 magnums from Il Caberlot and 6-8000 bottles of Carnasciale are produced. Oenologists and winemakers: Peter Schilling and his assistant Marco Maffei.
