Tasting note
Dark ruby garnet with a garnet red edge, complex aromas and flavors of black and red berries, cassis and violets with some mocha and cedarwood from the barrels. A great, intense wine for special occasions.
Culinary recommendation
It is suitable for a South African braai.
Vinification
All vineyards are located in the coastal area of Stellenbosch, and the quality of the grapes is positively affected by the cool southern sea breeze that blows across False Bay in summer. The Cabernet Sauvignon vineyard and one of the Merlot vineyards have trellis vines. The rest of Merlot and Petit Verdot are bush vines. The grapes are harvested by hand, sorted and fermented in open fermenters with regular push downs. This was followed by prolonged maceration on the skin and the wines were pressed in a wooden basket press. The malolactic fermentation was carried out in oak barrels and the wine was then aged in them for 35 months.
