Tasting note
Medium-dark plum color, slightly sweet red berries, cassis, violets with mocha, cedarwood and complexity of barrel ageing. A full-bodied, elegant wine with the balance and structure to store up to 20 years when stored under favourable conditions.
Culinary recommendation
It is suitable for a South African braai.
Vinification
The grapes were harvested by hand, destemmed, sorted manually and mashed into open fermentation containers. During fermentation, the wine was regularly removed and was macerated for an extended period of time. After pressing, the Cabernet Sauvignon was diverted to 225 liter barrels and stainless steel tanks for malolactic fermentation. The further ageing took place in French oak barrels for 34 months. 21 barrels of Cabernet Sauvignon and 3 barrels of Cabernet Merlot were then selected, blended and bottled.
