Das verspielte Bukett des Exelsis Blanc Vin de Pays Suisse von Passionsfrucht, Pfirsich und Mandel zeigt vielschichtige Aromastruktur und viel Finesse. Die dominanten Noten von Zitrone, Limette und Apfel gestalten ihre individuelle Textur. Mit schlankem Körper und dominanter Säure zeigt dieser fruchtige Weisswein seine meisterliche Beschaffenheit.
Culinary recommendation
A great wine in gastronomy; outstanding and storable wine, which expresses the minerality of the terroir in the best possible way and goes perfectly with foie gras, terrines, seafood, poultry in sauce, mushrooms or various types of cheese.
Vinification
For many years, the entire winery has been managed according to environmentally friendly principles. The degree of ripeness of the grapes is regularly monitored shortly before harvesting in order to determine the optimal harvest time. The harvest amount is strictly limited to guarantee the highest quality. The harvest is picked by hand and sorted out after arrival in the cellar to keep only the best berries. After gentle pressing, alcoholic fermentation takes place. The wine is aged on fine yeast in stainless steel tanks and large oak barrels. A slight filtration takes place before bottling.
