Tasting note
Pale pink color. Fresh red fruit on the nose with orange peel and rose petals. Some balsamic aromas mix with notes of baked earth and clay from the amphorae. Fruity on the palate with fresh acidity. Lots of texture, medium body and medium finish.
Vinification
3-4 hours of maceration with peels and seeds. The pressed must is then filled into amphorae of various sizes, where fermentation begins spontaneously and without the addition of sulfur or temperature control. After the fermentation is complete, the wines remain in the amphorae for a further 4 months without decanting and are then bottled directly without clarification, filtration or addition of sulfur.
