Tasting note
On the nose, aromas of stone fruit, orange peel, orange blossom and jasmine. It has iodine nuances from the sea as well as notes of earthenware and clay from the earthenware vessel. In the mouth, the wine is dry and refreshing, with a pronounced salinity typical of La Mata wines. It is a white wine with texture, medium body and integrated, pleasant acidity.
Vinification
30% of the grapes are placed in earthenware vessels without destemming, the remaining 70% are destemmed. The must ferments with the skins in earthenware containers, spontaneously with yeasts from the nature park and without the addition of sulfur dioxide. Complete contact with skins for 28 days. After pressing, the wine remains in earthenware containers for 4 months until bottling.
