About the wine
With the powerful Cabernet Sauvignon 2007 — Duck Muck, you can offer your guests something very special. Sunny and beautiful landscapes in Victoria give us these grapes, from which the winemaker from the Australian winery Wild Duck Creek conjures up this red wine with refinement and experience. The Flaschenpost team guarantees a culinary experience when you serve this Cabernet Sauvignon with Gruyère burgers or red meat.
Tasting note
Complex bouquet with hints of blackcurrant and violet as well as perfectly integrated woody notes. Full-bodied, with a firm structure and pronounced fruit aromas of currant jelly, plum and eucalyptus. Long, soft finish and perfectly integrated tannins. The balanced acidity gives this excellent wine character, elegance and considerable aging potential.
Culinary recommendation
Our recommendation: The red wine tastes best at a slightly chilled 16°-18°C. The following period is the ideal enjoyment phase for this wine: 8-20 years after the harvest. Recommended by Flaschenpöstlern: Duck Muck goes well with Gruyère burgers, red meat and pizza with mushrooms.
Vinification
A few words about vinification: This wine is only produced if the Shiraz grapes are of very good quality and can be harvested late. Cabernet Sauvignon, on the other hand, must demonstrate the potential for flawless, concentrated pressed wine. After hand-picking, the grapes are vinified separately. Arrive in open fermentation tanks in which alcoholic fermentation takes place. The pomace hat is pushed under by hand several times a day. The wine is then gently pressed with a basket press. 20-25% pressed wine from Cabernet Sauvignon is separately filled into barriques. The 24-month maturation takes place in new French and American barriques. The wine is bottled unfiltered.
