Tasting note
The nose is complex but just as unobtrusive — red currant, cherry, pomegranate, a touch of rose, olive, white pepper and earth. The palate shows excellent purity of the fruit, paired with a great acid structure and powdery tannins, the finish is extremely long and dry. Sleek and balanced
Culinary recommendation
Goes well with sous-vide cooked Iberico pork cheeks with fried parsley roots.
Vinification
The 2021 vintage consists of five Grenache Noir vineyards, with the base being a vineyard from the Paardeberg that was planted in the early 2000s. This vineyard is joined by another Paardeberg vineyard, which was recently planted on the northeast side of the Langkloof Valley with a view of the Aprilskloof. Another addition is a vineyard created in 2016 with slate soils from the Kasteelberg. This vineyard was planted on terraces high up in the mountains. Finally, Grenache Noir from a farm north of Malmesbury was also added, a vineyard that David & Nadia has been working with since 2012. Twelve different grapes were harvested from the five Grenache Noir vineyards. Some (60%) of the wine was fermented and aged in concrete. The juice was left on the skins for four weeks before and during fermentation, and 60% whole grapes were used. One tapping was carried out per day, which resulted in minimal and gentle extraction. The wine was pressed and aged for one year in old 500-liter neutral French oak barrels and in 2 700-liter concrete containers.
