Fantastic wine with a lamb cassoulet or an Iberico Pluma with confit potatoes and grilled padron.

It took almost 10 years for this dream to come true, which was shaped by the reality of agriculture in Swartland, its periods of drought, our love for a particular wine, the Elpidios. Diversity and recognition over time, we share this dream with Swartland, where we made Grenache the leading grape variety in Elpidios for the first time in 2017. Grapes from 12 different vineyards are used, which have been harvested in 16 batches. 30 - 50% whole bunches of grapes are sorted and then placed in the bottom of an open tank. The rest of the grapes are sorted, destemmed but not crushed and placed in the tank on the whole grapes. The 2020 vintage once again contains some of the wine that was fermented in concrete containers, Grenache and Syrah. In addition to the concrete containers, the wine was vinified in 500L French wooden barrels and the Pinotage in a 4100L fuder. Elpidios is produced in a similar way to Grenache in terms of gentle extraction and the use of whole grape fermentation. After bottling, the wine aged in the bottle for 18 months.
