The winemaker from the Spanish winery Santiago Ijalba S.A. masters this red wine with sensitivity and intuition in the fertile and enchanting landscape of the Upper Ebro. Tasting note
Wine versus “Herz-Chriesi” small reflectors reflect sunlight directly onto the grapes, the berry skins tanned in this way contain antioxidants, Roberto Ijalba's goal: “wine in moderation is good for your health” Dense color dark cherry red thanks to the absence of sulfur. On the palate, aromas of ripe peacocks, figs, black fruits, berries, cherries, mocha and some chocolate. Round, soft tannins and a long finish. Santalba is the wine with the highest measured content of resveratrol. The enormous effect on health has been proven several times in the study “French paradox.” Resveratrols help prevent the risk of heart disease, what is still missing is approval from health insurance companies, but simply eating Santalba makes you feel in perfect health anyway, but we must not advertise it as a medicine. Research is also being carried out on the elimination of micro-traces of ochratoxin in wine, which no one has taken care of so far. (The mycotoxin ochratoxin A (also known as “OTA”) is produced by molds of the genera Aspergillus and Penicillium. The mold poison is highly harmful to humans and animals.) Roberto Ijalba brings pure nature into the glass with scientific accompaniment.
