Tasting note
100% Sangiovese, carefully assembled from the best plots in Castagnoli. The Riserva is rich in ripe, red cherries as well as spicy and earthy aromas. Dried cherries and red plums also appear on the palate, which has lots of sweet, soft tannins. The finish is elegant and rich in aromas.
Culinary recommendation
Flaschenpost team recommends this Chianti Classico Riserva Terrazze for pizza, pasta and lamb. Our recommendation: The perfect drinking temperature for organic red wine is slightly chilled 14°-16°C.
Vinification
The grapes are picked by hand in small boxes. The alcoholic fermentation takes place spontaneously with natural yeasts in 1-ton vats and steel tanks. The peels are macerated very carefully: The berries fall from the stripping machine directly into the barrels without going through a pump or tubes, so that they remain intact and are crushed by their own weight alone. Malolactic fermentation takes place in oak wood. The wine is aged for 24 months in French oak barriques and tonneaux before being aged in the bottle for at least twelve months.
