Tasting note
The wine is intense ruby red with slight garnet reflections. Its bouquet is complex, rich, elegant and territorial. It combines fruity nuances of red fruits and small berries with spicy elements, accompanied by fresh notes of medicinal herbs and Mediterranean maquis. On the palate, the wine has balanced tannins and a soft, dense and juicy texture. The concreteness and integration of taste is accompanied by a fresh acidity that lingers in fruity and spicy nuances. The overall experience is rounded off by a pleasant fresh minerality.
Culinary recommendation
Flaschenpöstler-Tipp: Chianti Classico DOCG Gran Selezione passt bestens zu Pasta, Pizza und Lamm.
Vinification
The grapes are harvested manually, with the grapes collected in small boxes. After harvesting, they are cooled overnight and then checked on a double sorting table. Fermentation starts spontaneously with natural, local yeasts in small steel tanks with temperature control. After a gentle maceration on the skins for about 30 days, the wine is transferred to French oak barriques, where malolactic fermentation takes place. During the aging phase, the wine then lingers for 24 months in French oak barriques, followed by a further rest period of 6 months in tanks. Before release, it is aged in glass for at least 3 months.
