Chianti Classico DOCG Fossivènto Chioccioli 2021 - Chioccioli

About the wine

Chioccioli is a family business that was born out of a dream of the brothers Chioccioli Altadonna. Niccolò and Enrico, the sons of one of the world's most renowned and award-winning oenologists and agronomists Stefano Chioccioli, have dedicated their passion to researching and interpreting the area they have been associated with since childhood.

Tasting note
This wine is presented in an intense ruby red with delicate garnet red shimmers. Its aroma is characterized by a strong territorial character, with fruity accents of red fruits such as cherries and sour cherries dominating. These fruity notes are complemented by floral notes, in particular violets, as well as savory and mineral nuances, which are harmoniously interwoven with fresh spices and herbs. On the palate, the wine impresses with balanced and distinctive tannins, a crisp texture and lively acidity, which results in a long-lasting fruity and spicy finish.

Vinification
Grapes are harvested manually in small baskets, after which the grapes are cooled overnight before being carefully checked on two sorting tables. Natural fermentation with local yeasts takes place in terracotta amphorae as well as in small stainless steel tanks. After maceration, i.e. the soaking of the grape skins, the wine is stored both in barriques and partly in amphorae to go through malolactic fermentation. This is followed by a 16-month maturing phase in French oak barriques and terracotta amphorae. Before it is launched on the market, it is also aged for at least three months in the bottle
