Tasting note
Intense nose of ripe juicy fruits such as pears, pineapples, apples and quinces. On the palate, it impresses with its clear acidity, good integrated minerals and flattering wood. Citrus notes and yellow fruits dominate the long aftertaste.
Culinary recommendation
Goes well with Mediterranean cuisine, poultry, saltwater fish, seafood, veal and vegetables.
Vinification
The grapes from the two best plots of the Arinto grape variety and the best plot of the Roupeiro grape variety were selected and selected. Three different fermentation and aging processes were chosen for this distinctive white wine. 1. Arinto is fermented with partial skin contact of the grape skins and then aged in 600l new French oak barrels. 2. Arinto and Roupeiro are fermented in 600l used French oak barrels with a skin maceration of two days. 3. Arinto is pressed directly and fermented in used 600l oak barrels. The three barrels are then blended.
