About the wine
The philosophy of Giovanni Corino is based on the following basic principles: great attention to work in the vineyard in order to preserve the characteristics of the terroir while respecting nature. For this reason, products based on copper and sulfur are mainly used, without the use of pesticides. The sulfite content in the bottles is at least 50% less than what Italian law allows. During vinification, Corino tries to find the right balance between modernity and tradition.

Tasting note
Nose: very intense aromas of cherries, plums and plums with some earthy notes, pepper and vanilla. Round structure, soft, slightly spicy finish.
Culinary recommendation
Goes well with meat dishes, vegetable gratin, truffle risotto and spicy cheeses
Vinification
5-7 days of maceration at a temperature of 25 to 30° C. Then steel tank. End of sugar fermentation and malolactic fermentation in 50% new and 50% used barriques, 18 months. Then steel tank stored for 3-4 months.
