Tasting note
The Babylonstoren Babel Red is a brilliant red wine cuvée dominated by Bordeaux grape varieties. It flows into the glass in an intense red and gives off aromas of sweet tobacco, fragrant pencil chips, dark chocolate, mulberries and cherries. Delicious aromas of red berries and fine chocolate caress the palate. The aftertaste is long-lasting, pleasantly soft and smooth.
Culinary recommendation
Goes well with slow-cooked venison or oxtail stew, grilled boerewors, grilled lamb chops with rosemary, or lightly seasoned pulled pork.
Vinification
The grapes for Babel come from the slopes of Simonsberg between the Franchhoek, Stellenbosch and Paarl wine-growing regions. The various grape varieties are harvested separately and vinified separately. The grapes were harvested separately and fermented on the skin for seven days, followed by an extended swelling phase of one week. The must was pressed into 30% new wood and 70% second and third filled barrels, where the malolactic fermentation was completed. The different varieties matured separately in first and second filled French barriques for 12 months before they were blended together.
