About the wine
The winemaker from the US winery Halter Ranch has absolutely mastered his craft. Elegance and finesse are the characteristics of this red wine, which originates in the sunny landscape of California. The dominant Cabernet Sauvignon 2015 — Ancestor is the missing piece of the puzzle in your wine rack. The Flaschenpöstler promise a culinary experience when you serve this Cabernet Sauvignon with pizza with mushrooms or ribeye steak.
Tasting note
The flagship, the Ancestor, a Bordeaux-style wine and an homage to the Ancestor Tree, the largest known Californian holm oak tree. The Ancestor presents aromas of red currants and dark chocolate with subtle hints of cinnamon and cloves. The start is soft and rich with complex aromas of blueberries, blackberries and dark cherries. The middle palate is dense and mouth-filling with balanced acidity. The finish is framed by harmonious tannins and delicate aromas of caramel and truffles.
Culinary recommendation
It goes well with fried meats, reduced sauces, and hearty stews.
Vinification
Deserted and fermented in closed fermentation tanks, with daily deledays in the first days of fermentation, followed by pumping two to three times a day over an average period of 16 days. Aging for 16 months in 59-gallon French oak barrels, 60% of which are new barrels.
