Tasting note
Dark ruby red color. The bouquet features pleasant fruit notes, which are reminiscent of ripe cherries and plums, as well as spicy notes, as well as white chocolate and nut notes. The taste is full-bodied, enveloping, soft with velvety, elegant tannins. Very long-lasting.
Culinary recommendation
Goes well with grilled meats, game, roasts, pot roasts and aged cheeses. It also goes very well with black chocolate and is also an ideal meditation wine.
Vinification
The grapes are picked by hand at the end of September and beginning of October and brought to the winery in small boxes. The grapes are dried in their own fruttaio (very well-ventilated room) for around 120 days and lose 50% of their weight as a result. Only then does winemaking start. The gently pressed grapes fall by gravity into small stainless steel containers. Controlled fermentation, then aging for 24-30 months, refinement in wooden barrels made from selected wood. This is followed by a further refinement of six months in the bottle.
