About the wine

Ökonomierat Rebholz is a very big name in German wine, whose reputation is not based on adapting to fashion or colorful labels, but on the consistent implementation of a philosophy: natural wine (certified organic, biodynamic), the unvarnished representation of terroir and vintage. What are almost mandatory terms in every wine letter today has been maintained by Rebholz for generations, i.e. at a time when refraining from deacidification or deacidification were radical and risky decisions. And even today, Hans-Jörg Rebholz vinifies character wines from his 22 ha, which illuminate and exhilarate the various terroirs from redlying to shell limestone and red sandstone. Grandiose, stylish, uncompromising and always uncomfortable wines that make the hearts of Riesling and Burgundy lovers beat faster.

Maturity, experience, intuition, a big affirmation of all life, wonderful breadth and natural freshness, bright and clear, softly sweet fruits, pears, also sweet exoticism, fresh herbs and greenery, present, calm, slightly tart minerality, no hardness, no sharpness, no moralizing, rather rich and deep in an almost natural way, open, inclined, take as it comes. On the palate with benevolent confidence, sensitive and self-contained, natural harmony, juicy bright fruit and — despite great presence — mild minerality and slightly sweet and gently tart freshness. It is precisely this inner ripeness, this relaxed confidence that gives the wine true greatness. A great, neutral food companion!

Flaschenpöstler-Tipp: Weisser Burgunder Mandelberg GG passt perfekt zu Rauchlachs, Hartkäse und Pulpo.
Vinification
Very selective harvest by hand. 24 hours maceration time. Preliminary clarification through natural sedimentation, aging in stainless steel tanks, long storage on yeast, without fining.
