Tasting note
Very dense ruby red. Complex nose with ripe fruit of plums, cherries and black berries, refined with nuances of toasted bread, coffee, cocoa and tobacco. Rich in the palate with velvety tannins. The long finish is accompanied by notes of mint and dark chocolate.
Culinary recommendation
It goes well with grilled beef, but also refines autumnal venison steak with porcini mushroom sauce, pasta with hearty bolognese or brasato from the oven.
Vinification
After gentle pressing, the must is placed in steel tanks. Cold maceration at 5-10 °C for three to four days is followed by temperature-controlled alcoholic fermentation. The wine then goes through malolactic fermentation and a ten-month rest period in French oak before maturing in the bottle for a further months.
