About the wine
Al-Cantàra was born in 2005. Right from the start, the winery has made a name for itself nationally and internationally thanks to the extremely high quality of its wines. This was the first winery on Etna in terms of the number of important awards. Another distinguishing feature of Al-Cantàra products is their sophisticated and modern packaging, whose distinctive labels by young Sicilian artists, most recently by Annachiara Di Pietro, are decorated with atmospheric images that highlight the traditions, culture and territory of Mount Etna. Tasting note
Ruby red color. Aromas of camphor, wild herbs, red berries and a hint of smoky flint. The bright, linear and elegantly structured palate reflects the nose and is characterized by juicy raspberries, blood oranges and star anise before ending in a spicy mineral note. Firm, fine-grained tannins and bright acidity provide smooth support.
Culinary recommendation
Goes well with fried red meat, game and aged cheeses.
Vinification
The crushed grapes are collected in stainless steel tanks, where fermentation takes place in the presence of the pomace at a temperature of 26—28 °C. The wine is then filled into chestnut wood barrels, where malolactic fermentation takes place. In the barrels, the wine remains on the fine yeast for 12 months. After an additional year of ageing in steel barrels, the wine is aged in the bottle for another 12 months.
