Tasting note
After harvesting, the grapes are stored in a cooled room for a few days to highlight their aromatic richness. After a 12-hour maceration on the skins, it is gently pressed and fermented at 17°C for 12 to 15 days. This is followed by aging for 5 months in stainless steel tanks.
Culinary recommendation
Goes well with aperitifs and starters, asparagus and fish dishes.
Vinification
12 hours of maceration on the skins. After gentle pressing, temperature-controlled fermentation for approx. 12 - 15 days at 17° C.
