The toast Hawaii white is a mixture of Sauvignon Blanc and Traminer from the best Ollersdorf vineyards (limestone), both varieties being fermented slightly on the mash and then aged on the yeast in a concrete factory for a year. This straw-yellow white wine, which is bottled unfiltered, opens with an intense, dense, aromatic, spicy, yeasty and even chalky bouquet. On the palate, it is lush, round and elegant, with an enormous abundance of fruit and a serious and persistent mineral feel. It is a nice, moderately heavy, dry cuvée with a fine phenolic tannic feel and a good texture in the finish.
