About the wine

Dominik Benz and his family in the south of France were able to realize his dream of owning their own winery. After a career in IT, he trained as a winemaker at the age of thirty at the Schloss Salenegg winery in Maienfeld GR. Successful completion of training in 2012 and start of new employment at Agroscope Wädenswil, in the wine research area. Dominik grew up in Zurich and most recently lived in Wädenswil. He moved to France at the end of September 2013 in time for the first harvest. Here he was able to lease vineyards from the Domaine du Ribonnet in Ariège (Moulin de Beauregard). A new cellar had to be built and an apartment. He now owns the vines of Christian Gerber (Ribonnet) and those of Cavino's first winemaker Ernst Wirz, with whom we worked for 40 years before he died in 2020 due to age. For Cavino, it is a pleasure to be able to offer Dominik Benz, another, innovative winemaker in Ariège. All wines impress with their very high quality and simplicity. Benz vinifies Syrah, Merlot, Cabernet-Sauvignon, Nebbiolo, Chardonnay and Tannat from the three vineyards Moulin de Beauregard and Moulin à Vent in Fossat in the Lèze Valley. The estate is certified organic.
