Tasting note
The Cabernet Franc defines the aroma with wild strawberries, blackberries, cooked meat and brown spices, which take on a touch of paprika over time. Vinification
This classic wine has remained true to its composition since it was first produced in the 1990s. A remarkable Bordeaux blend dominated by Cabernet Franc, reinforced by Merlot and complemented by Cabernet Sauvignon. This majestic winery is located at the foot of the Helderberg, with panoramic views that reach Cape Point, Table Mountain, Robben Island and the Stellenbosch Hills. Here, the vineyards are planted at an altitude of 300 meters above sea level, overlooking False Bay in the southwest. It is this unique location and positioning that supplies the vineyards with the gentle cooling sea breezes, which allows optimal slow maturation during the summer months. All grapes on the estate are picked by hand. Once in the cellar, the grapes are gently transferred by gravity into both stainless steel and cement containers for fermentation. This is followed by a period of cold maceration, which allows a rich extraction of color, elegant aromas and bright taste. At the end of fermentation, prolonged maceration follows, which gives the wine a soft texture, increased color intensity and complexity. Our wine is aged in a combination of 225 liter oak barrels, 9000 liter foudre and traditional 4500 liter cement tanks for a period of three years. These different vessels each add a variety of elements to the wine, ranging from fruity character to subtle woody influences. These elements are selectively brought together during winemaking to form a harmonious whole.
