It goes fantastic with confitted mullet with fried fennel and braised lavender apricots.

This excellent vintage was cooler than usual and the harvest began two weeks later than the previous vintage. The winter of 2020 was wetter than usual, with 150 mm more rain than measured on average. Cold winter temperatures that occurred later than usual, paired with warmer January and February, contributed to optimal maturation conditions. Unfortunately, yields in the Chardonnay vineyard were still extremely low. These growing conditions had a very positive effect on the quality of the vintage, which brings out the unadulterated properties of the Bokkeveld slate soils at a cooler location - a higher altitude and a cool eastern slope.
