Tasting note
The grapes come from the Alte Geringen vineyard. The name means “extracted from nature in ancient times”; the heavy loess clay soils of the vineyards below the picturesque Ketzelsdorf Kellergasse are the ideal basis for St. Laurent, which was planted at the end of the 1950s. Typical scent of red wild berries and subtle sweet wood spice. Burgundian style on the palate, full-bodied, silky, with an elegant structure, rich in finesse, very finely balanced with wonderful fruit-acidity, finely spicy notes and very finely integrated tannins.
Vinification
After reeling and squeezing, the juice and berries are left together for at least 30 days and squeezed in by hand every day. Biological acid degradation and subsequent storage take place in 30% new and 70% used French oak barrels.
