Sic Transit Gloria Mundi is chosen for its rare intensity, clarity of expression and potential to reflect the winemaking principles underlying the winery. The vineyards and grapes selected for this wine vary from vintage to vintage, and the style can vary significantly from year to year. Each unique vintage is a rare glimpse of a particular terroir. The vineyards selected in 2016 have deep loamy soils with large stones, boulders and fractures, which require the vines to develop deep root systems and produce complex, multi-layered wines. The grapes were harvested by hand in 18 kg stollen boxes and manually sorted according to consistency, ripeness and removal of the leaves from the grapes. The resulting grapes were fermented in 600-liter stainless steel tanks with daily reassembly and délestage. The wine consists almost exclusively of free-running juice, which is gently pressed by hand to obtain a small amount of less than 5% of the total volume. After bottling, the wine was aged for 24 months in 225 liter French oak barrels. The wine was bottled without fining or filtration. Some natural sedimentation may occur in the bottle. In the 2016 vintage, Sic Transit Gloria Mundi is made from the Syrah grape.
