Tasting note
Straw yellow with greenish reflections. Fine and aromatic on the nose, notes of elderflower, mint, basil, sage, yellow peach and papaya. Rich taste, full, elegant, long and mineral, pronounced acidity.
Culinary recommendation
Ideal with mussels and clams, grilled fish, vegetable dishes, asparagus, egg dishes and delicious risottos.
Vinification
Name of the vineyard: Stabili della Rocca (3 ha), cultivated using the Guyot method, harvested in mid-September. East-west orientation at 85 m above sea level with a planting density of 4,000 vines/ha and a yield of 70 quintals per ha. After cold maceration, the must is fermented at a controlled temperature for 10 days. The wine then rests in stainless steel containers for 8 months and is then refined in the bottle for 1 month. Acidity 5.65 g/l; dry extract 21.5 g/l.
