Tasting note
Slow cold fermentation at around 17° C preserves the fresh berry aromas of this Sauvignon and promotes their intensity. After fermentation, the Sauvignon Villa remains Vitas are still on the fine yeast for several weeks with regular “batonnage”, which is due to soft melt and general balance is only beneficial. roberto Vitas creates a winning business card with this wine for his company.
Culinary recommendation
It goes well with aperitif, antipasti, fish and charcuterie.
Vinification
Die Vinifikation fand wie folgt statt: Eine langsame Kaltgärung bei etwa 17° C bewahrt die frischen Beerenaromen dieses Sauvignon und fördert deren Intensität. Nach der Gärung bleibt der Sauvignon Villa Vitas noch mehrere Wochen auf der feinen Hefe liegen mit regelmässiger "Bâtonnage", was dem weichen Schmelz und der allgemeinen Ausgeglichenheit nur zuträglich ist. Roberto Vitas gelingt mit diesem Wein eine gewinnende Visitenkarte für seinen Betrieb.
