About the wine
An elegant Sauvignon Blanc that offers both vibrancy and refinement. The Rippon winery is one of New Zealand's top producers.

Tasting note
A very complex bouquet of violets, plums, red and black cherries, rhubarb, red currants and notes of spices and dried herbs. The palate absorbs the aromas, is full-bodied, harmonious and intense. Minerality is added. Juicy tannins and lively acidity accompany the wine in a long-lasting, complex finish.
Culinary recommendation
Goes well with mushroom dishes, grilled salmon and Mediterranean meat dishes.
Vinification
Harvested by hand on 12 different days. 12 months in new (16.6%) to 4-year-old French oak barrels. The malolactic fermentation took place in spring without outside help (spontaneously with our own cellar yeast). The wine was then bottled again and spent a second winter in neutral barrels before being bottled directly into the bottle without filtering or beauty. Total time in barrel: 18 months.
