About the wine

Sébastien was just 21 years old when he gave up his job in a Parisian wine shop in 2002 to prevent the sale of his parents' winery in Sury-en-Vasux. As early as 2003, the conversion to biodynamic viticulture took place, rigorously, even the use of copper is dispensed with, in any case, with machines anyway, the processing is carried out with horses. The vineyards resemble natural oases, what a variety, there is no sign of monoculture. An extremely late harvest with botrytis, lots of time in the cellar, time instead of chemical aids, a wheel-cold approach, but the wines are anything but radical, they radiate an inner warmth and peace, a gentleness, a size not otherwise found in Sancerre, very big, and far away from the steely, crunchy and rampant Sancerre! A revelation!

Tasting note
The soft revolution — that is peace, that is strength, that is movement, that is departure. This inner peace and absolute presence, very big, golden, as warmly glowing as it is resting fruit, honey, cream, tonka bean, chamomile, yeast, a big meeting, a unity, this certainty and calm power that moves. On the palate, gentle powerful guidance, serious, tart, herbal notes, but also peace, faith, without judgment, he has this warmth, including honey and nuts, this harmonious ideal, inner conviction, you simply follow him, this power that nourishes in good, tamed by it, the chalky minerality in the tart, sweet fruit, this gentle, powerful movement. Very, very big, golden Sancerre!
Culinary recommendation
Flaschenpöstler-Tipp: Sancerre Blanc AOC Aukskinis passt ideal zu Fisch, Geisskäse und weissem Fleisch.
Vinification
Selective, very late harvest by hand, 50% botrytis. Direct pressing, fermentation with the vineyard's own yeasts, malolactic fermentation, aging for three years in old oak barrels on the yeast, unembellished, unfiltered, unsulphurized.
