Tasting note
Intense ruby red with garnet red reflections. The aroma is complex and rich. licorice, clove, leather, plum and cherry jam, black pepper and cinnamon. Full-bodied wine, intense in the mouth and with a long-lasting aftertaste with spicy notes
Culinary recommendation
It goes very well with grilled meat.
Vinification
Pressing and fermentation at a low temperature for three weeks, with the removal of some of the liquid (25%-30%) to increase the concentration of polyphenols. This process is called “Salasso,” an ancient method passed down by our grandfathers to traditionally produce Bardolino.
