Tasting note
Complex aromas of wild berries, tobacco leaves and balsamic notes. A lot of melting on the palate, very balanced and delicate, the finish shows velvety tannins with a long aftertaste.
Culinary recommendation
Wonderful with beef — from steaks to stroganoff to tartare or slow-cooked roasts from the oven. Wonderful accompaniment to all kinds of stews — whether lamb gigot, beef shoulder, roast pork or ossobuco.
Vinification
Harvested by hand in the first ten days of October (with possible variations depending on seasonal weather conditions). Fermentation and maceration at a controlled temperature in steel tanks, for approximately 3-4 weeks. Ageing for 18 months in large Slovenian wooden barrels, followed by a further 6-9 months in the bottle before the Barbaresco Riserva is released on the market.
