About the wine
The Romans already knew what great wines were produced here and in the 3rd century they created vineyards on the slate slopes that still exist today and on the historic Van Volxem s winery. Today, Roman Niewodniczanski and his team are continuing the rich tradition. Aware of the uniqueness of their history and locations paired with the necessary innovative spirit, they create wines that are unrivalled in terms of excitement and expression, some of which are over 120 years old. With their pure, precise handwork, a return to traditional craftsmanship and respect for the surrounding nature, the goosebumps moment is guaranteed!
Tasting note
A great wine is always a reflection of its soil! Says an old French winemaker saying. Hardly any other wine expresses this so much. Right on the first taste, it is salty, mineral and at the same time bright spicy, with white pepper, so exciting! Only after a certain period of time does it develop all its bright power, with fully ripe, yellow fruit of apricots, mirabelles and vineyard peaches. This wine fascinates and seduces, always finding something new, you search further and further in this velvety sea full of undiscovered, playful facets. Incredibly long, unbelievably textured. A stunner. Just like that.
Vinification
Very selective harvesting of fully ripe grapes by hand and further selection at the table in the cellar. Gentle, gentle pressing, spontaneous fermentation with the vineyard's own yeasts in oak barrels and temperature-controlled steel tanks. Aging over 10-11 months in large wooden barrels. No additives or wine treatment agents.
