Tasting note
What a full nose. Sweet tart cherry, sweet blackberry, a hint of cassis accompanied by deep spice with allspice, a hint of cinnamon, clove, black pepper and, quite subtly, a touch of dark chocolate. Voluminous on the palate, with gripping but fine tannins and a nice freshness that comes from the racy acid structure. Really juicy and refreshing on the palate in sour cherries and not sweet wild berries. Due to the grandiose acid freshness, the Syrah looks significantly more crisp than the sweet-spicy nose would suggest. Almost showing a dance breed right up to the long-lasting finish, in which the juicy fruit is accompanied by allspice and pepper.
Culinary recommendation
Goes well with hearty meat dishes such as game with fruit sauces or grilled meat.
Vinification
The Syrah grapes are picked by hand and sorted by hand. One third of the total grapes are crushed with the feet, and then the remaining 70% are placed in concrete containers. Spontaneous, natural fermentation takes place with minimal punch-downs and pump-over. The natural malolactic fermentation takes place in older French barrels and larger 2500L foudres. The wine matures for 14 months in oak barrels and a further 3 months in stainless steel tanks.
